Allergies against birch pollen are caused by different isoforms of the protein Bet v 1, affecting
up to 25 percent of the population in Central and Northern Europe. While crystal structures of
various Bet v 1 isoforms have been known for more than a decade, the observed drastic immunologic
differences between them have remained unclear. I will present recent solution NMR data
that provide insight into the interplay between structural flexibility and allergic potential. Additional data regarding cross-reactive food allergens from apples and how these relate to birch pollen allergies
will be dicussed.
